Marzipan, a doughy mixture of ground almonds and sugar, came to Europe from the Far East in the Middle Ages. Today it is a true delicacy and is also an important decoration element for cakes and pastries and as a filling in chocolates, luxury cakes and pastries. There are many theories about the origin of the word "marzipan". The suffix 'pan' is said to be traceable via 'pain' to the Latin 'panus' for bread. But for the first part, "Marzi", opinions diverge even to five theories. With the first theory, some see the origin in the city of Marseille (bread from Marseille). Others think that the Italian Marso is the discoverer of this delicacy. A third theory goes to the Roman god of war Mars (marci panis = bread of the god Mars). Yet another source takes place in Lübeck in 1407, where a sugar baker would have made marzipan as food on the day of Saint Mark and named it after Marcus. A final theory can be found in Arabic cuisine: according to some, the name "marzipan" comes from the Arabic "maulhaban", sitting king. Moorish bakers in Spain used a coin on which a prince sat on his throne to stamp their marzipan.
