Nougat

Description:

This treat based on egg white, honey, nuts and sugar is a real delicacy. This soft nougat is enriched with little pieces of almond.

Ingredients: sugar, almonds 25%, glucose syrup, honey, egg white, wafer paper (potato starch, sunflower oil), natural vanilla extract.

Nougat is a traditional candy from the countries around the Mediterranean and the Middle East. There, the nuts and honey are abundant, and these are exactly the essential ingredients of any nougat variety. Depending on the country of origin, we find many nougat variants. Spain, for instance, is known for its almonds, which is why we also find them in the Spanish varieties turrón and jijona. Italy is famous for the hazelnuts from Piedmont and the pistachios from Sicily, so they are processed in their so-called torrone. Worldwide, many varieties of nougat are found, often produced by the descendants of Spanish and Italian families who emigrated and introduced their own recipes in the new country where they settled. In France the typical almond nougat of Montélimar was born.

For the origins of nougat we have to look much further, historical evidence have been traced back to the Byzantine Empire (from late Antiquity to the Middle Ages)!
